I can’t believe we’re already mid-August, this summer is flying by. I’ve been trying to embrace the long, warm summer days by spending as much time outside as possible, and less time inside watching Derek cook. We’ve been busy hosting garden parties and trying to enjoy as much precious time with friends and family as we possibly can. We’ve also been BBQing nightly, spending sunny afternoons in the park over delicious picnics and just enjoying the outdoors. Of course, all this hosting and running around, often builds up an appetite, but the hot, humid weather leaves us wanting light, crisp, refreshing snacks over hot, heavy, filling meals. Colourful fruit n’ cheese skewers are not only quick and easy, but make the perfect light and healthy dinner on evenings when you’re feeling lazy.

Although these fruit’n cheese skewers won’t actually be hitting the grill, nor will they contain any meat (perfect for us vegetarians), they will be a huge hit at your next party you host or when you’re looking for a wholesome sweet treat in the evening. Simply cut up your favourite fruit into 1-inch cubes (think bananas, apples, strawberries, grapes, pears, pineapple), along with 1-inch cubes of your favourite cheese. Alternate between your cheese, Derek and I have been loving Gay Lea’s Ivanhoe Cheese thanks to its rich, creamy and flavourful taste, and your fruit of choice on wooden skewers. You can also quickly whip up a sweet yogurt dip, by combining yogurt and honey together, to create a sweet, yummy dip that goes hand in hand with the bitterness of the cheese.
